With summer entertaining season in full swing, I couldn't help but share my favourite summer cocktail recipe. It's so good, I even enjoy it without the booze before 5 o'clock!
SUMMER BERRY GIN SHRUB
2 cups of fresh summer berries (I usually use raspberries, but it can be done with strawberries or blueberries beautifully too!)
1 to 2 cups of white sugar (enough to coat the berries, or to suit your taste)
1/4 cup of your favourite Adoro Balsamic Vinegar (traditional recipes call for red wine vinegar or apple cider vinegar. I tend to grab my closest Adoro flavoured balsamic - both strawberry and vanilla pair beautifully with the berries...)
Muddle the berries in a glass bowl or large measuring cup. Pour in the sugar and vinegar and mix thoroughly. Let mixture sit for minimum of one hour. (You could leave it overnight if it suits!)
When ready, pass the mixture through a fine sieve. I store finished syrup in a mason jar in the fridge.
1 part Gin
2 parts Berry Shrub
Club Soda or Carbonated Water (I use my Soda Stream and filtered water)
Fresh Mint for garnish
Fill a collins glass or a high ball with ice. Add gin and shrub and top with soda water. Garnish with fresh mint.
** For a great MOCKtail... leave out the gin... It still tastes great.
